A Wisconsin original cheese! The first Colby was made in 1874 in Colby, Wisconsin. The cheese was named after the village.
After this premium Wisconsin Colby cheese from Hennings Creamery is made, it is wrapped in cheese cloth (similiar to gauze bandage) and air cured, allowing the cheese to age more rapidly.
Longhorn is a style of American Colby cheese defined by its round, long, orange cylindrical shape. Similar in flavor to Cheddar, Colby is softer and has a more open texture and high-moisture content. Colby is made the same way as Cheddar except the curds are kept separate with cold water, which prevents them from knitting together. This gives Colby a more elastic texture than Cheddar.
The distinctly mild flavor makes it ideal for grilled Cheese sandwiches.
